Ingredients

  • 8 large flour tortillas
  • 1/2 cup chipotle ranch sauce
  • 1/2 cup ranch dressing
  • 2 cups shredded Mexican blend cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup diced tomatoes
  • 1 cup crunchy tortilla strips
  • 1 tbsp olive oil (for grilling)

Instructions

First: Prepare the Chicken

  1. If using store-bought grilled chicken, warm it up in a skillet over medium heat.
  2. If making from scratch, season boneless, skinless chicken breasts with garlic powder, smoked paprika, salt, and pepper.
  3. Grill on medium-high heat for 6–7 minutes per side.
  4. Let the chicken rest, then slice into thin strips.

Second: Assemble the Burritos

  1. Lay a flour tortilla flat and sprinkle 1/4 cup of shredded cheese in the center.
  2. Add 1/4 cup grilled chicken, 1 tbsp chipotle ranch sauce, 1 tbsp ranch dressing, 1/4 cup shredded lettuce, 2 tbsp diced tomatoes, and a handful of tortilla strips.
  3. Fold in the sides and roll the tortilla tightly into a burrito.

Third: Grill the Burritos

  1. Heat a large skillet or griddle over medium heat and brush with olive oil.
  2. Place the burritos seam-side down and grill for 1–2 minutes until golden brown.
  3. Flip and toast the other side for another 1–2 minutes.
