Seasonings and Toppings:

  • 1 1/2 teaspoons Old Bay seasoning (or Cajun, Fajita seasoning)
  • Salt and pepper to taste
  • Sour cream and chives for garnish

Instructions

First: Preparation

  1. Chop the cooked potatoes into bite-sized pieces.
  2. Dice the ham or bacon.
  3. Whisk eggs in a bowl with heavy cream and Old Bay seasoning.
  4. Shred the cheese and set aside.

Second: Cooking the Potatoes and Ham

  1. Heat oil or butter in a large frying pan over medium-high heat.
  2. Add the chopped potatoes and sauté until golden brown.
  3. Stir in the ham and cook for another 2 minutes.

Third: Adding the Eggs

  1. Lower the heat and pour the whisked eggs into the pan.

Fourth: Melting the Cheese
