Ingredients

For the Chicken:

  • 3 tbsp lime juice
  • 3 chipotle chilis in adobo sauce, finely chopped
  • 1 ½ tbsp adobo sauce
  • 1 ½ tsp garlic powder
  • ¾ tsp salt

For the Cilantro Lime Rice:

  • 1 cup long-grain white rice, rinsed
  • 1 ½ cups water
  • ¼ tsp salt (plus more to taste)
  • 1 lime, zested and juiced
  • ¼ cup chopped cilantro

Toppings:

  • 1 head romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 avocado, chopped
  • 1 cup frozen corn, thawed
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ small red onion, chopped

Instructions

First: Preparation

Gather all the ingredients and set them aside.

Second: Cooking the Chicken

  1. In a large bowl, whisk together avocado oil, lime juice, chopped chipotle chilis, adobo sauce, garlic powder, and salt.
  2. Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours (or overnight for maximum flavor).
  3. Heat a skillet over medium-high heat. Remove chicken from the marinade and cook for about 5-7 minutes, stirring occasionally, until cooked through.
  4. Transfer the cooked chicken to a plate and let it rest before slicing.

Third: Cooking the Cilantro Lime Rice

  1. In a pot, bring 1 ½ cups of water to a boil. Add salt and rice.
  2. Reduce heat to low, cover, and simmer for 15-18 minutes until the water is absorbed.
  3. Remove from heat and fluff the rice with a fork.
  4. Stir in lime juice, zest, and chopped cilantro.

Fourth: Assembling the Chicken Burrito Bowl

  1. Start with a base of cilantro lime rice.
  2. Add romaine lettuce on one side of the bowl.
  3. Top with cooked chicken, black beans, diced tomatoes, corn, avocado, and red onions.
  4. Garnish with fresh cilantro and an extra squeeze of lime juice for added flavor.

Notes

  • Customization: Swap chicken for shrimp, tofu, or ground turkey.
  • Low-Carb Option: Use cauliflower rice instead of white rice.
  • Storage: Store ingredients separately in airtight containers and assemble before eating.
  • Spice Level: Adjust heat by adding or reducing chipotle peppers.
