Ingredients

  • Small Vanilla Cake or Gluten Free Yellow Vanilla Cake
  • Peach Mousse
  • 4 fresh peaches
  • 1 tablespoon, plus 2 teaspoons lemon juice
  • 2 tablespoons cold water
  • 1 tablespoon, plus 2 teaspoons unflavored gelatin powder
  • 4 tablespoons pure maple syrup (or any sweetener of choice)
  • 1 cup heavy cream

Instructions

  1. Bake the vanilla cake according to instructions and allow to cool. Use a cookie cutter to create rounds or chop into cubes.
  2. Peel and chop three peaches into cubes. Blend with lemon juice and maple syrup until smooth. Set aside.
  3. Chop the last peach for layering and sprinkle with lemon juice.
  4. Add water to a small bowl, sprinkle with gelatin, let sit for 5 minutes until gelled, then heat until liquid.
  5. Blend gelatin with peach puree for 30-45 seconds and chill for an hour.
  6. Whip heavy cream to stiff peaks and divide. Blend half with peach puree for mousse, sweeten other half for whipped cream layer.
  7. Assemble trifle layers with mousse, cake, whipped cream, and peach slices in serving glasses. Chill for three hours before serving.
