Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the oats, flour, baking soda, salt, and cinnamon. Set aside.
  3. In the bowl of a stand mixer, cream together the butter, peanut butter, granulated sugar, and brown sugar on medium speed until light and fluffy.
  4. Add the egg and vanilla, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Form balls of dough using a medium-sized cookie scoop, then roll each ball in the additional granulated sugar to coat.
  7. Place dough balls onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 11 to 12 minutes, or until cookies are lightly golden brown.
  9. Allow cookies to cool on the sheet for about 5 minutes before transferring to a cooling rack.
